You can target the midtones, high lights, dark shadows to change the color using opposite colors to remove an overall color tone. It will only target either the midtones, high lights, and dark shadows when u do this.

Saturation and Hue help specify the range of colors you want to use to enhance your image and make it the image you feel will help your photo pop with color but with balance.
